The only real difference is where the water leaves
Not-from-concentrate coconut water is pasteurised and packed as it comes out of the nut. From-concentrate coconut water has most of its water evaporated off at origin, ships as concentrate, and has water added back near the point of sale.
That single decision — where in the supply chain the water is removed — drives almost everything else: what you pay in freight, how much thermal load the product carries, what your label has to disclose, and where in the world the value gets added. This is a different question from concentrate versus powder, which our format comparison covers; here both options end up as a liquid drink.
Freight: you are either shipping water or you are not
Coconut water is roughly 95% water. Ship it NFC and about 95% of every container is water that exists everywhere in the world, including at your bottling site. Ship it at 60° Brix and you have removed most of that; at 82° Brix, more again.
The rule of thumb is simple: one container of high-Brix concentrate reconstitutes into several containers of finished drink. On a long-haul lane — India to the US East Coast, or to Northern Europe — that difference dominates the landed cost comparison. On a short lane into a nearby market, it matters much less, and NFC can win on simplicity.

Flavour: every thermal step costs you something
This is the honest case for NFC. Coconut water’s character sits in volatile aromatic compounds, and those are the first thing lost to heat. NFC carries one thermal step — pasteurisation. From-concentrate carries evaporation at origin, then pasteurisation of the reconstituted drink. More heat, more chances to lose the top notes.
How much this matters depends entirely on how the concentrate was made. High-temperature evaporation strips flavour aggressively and can push the product toward a cooked, caramelised note. Low-temperature evaporation — which is what our process is built around, and which our manufacturing walkthrough describes step by step — keeps far more of it.
The practical test is not to argue about it in the abstract. Reconstitute a sample to your target Brix and taste it against an NFC reference. If a supplier will not send concentrate for exactly that comparison, that tells you what you need to know.
Labelling: “from concentrate” is usually a disclosure, not a choice
In most major markets, beverage labelling conventions require a product reconstituted from concentrate to say so in or near the product name. In the United States this sits under the FDA’s beverage naming rules; other markets have their own equivalents. The practical effect is that you generally cannot reconstitute a concentrate and call the result not-from-concentrate.
Confirm the exact wording your market requires with your regulatory advisor rather than with your supplier — including us. What we can tell you is what we shipped and at what Brix; how that must appear on your pack is a question for someone accountable for your label.
If your brand positioning leans hard on “never from concentrate”, that is a real commercial reason to choose NFC, and no freight saving offsets it. If it does not, the disclosure is simply a line of text that most category buyers do not weigh heavily.
Which one fits which situation
- Choose NFC when — Your positioning depends on it, your bottling site is close to origin, your volumes are modest enough that container economics do not dominate, or you are selling into a premium tier where the flavour difference is part of what you are charging for.
- Choose from-concentrate when — You are shipping long-haul, blending at destination, formulating a flavoured or functional drink where coconut water is one input among several, or scaling to volumes where freight per finished litre is the number that decides your margin.
- Consider both when — You run a premium NFC line and a mainstream from-concentrate line off the same supply relationship. This is common, and it is a reason to pick a supplier who can credibly do both rather than one who only sells what they happen to make.
What to check before you commit either way
- Ask how the concentrate is evaporated, and at what temperature. “Low heat” with no number attached is marketing, not a specification.
- Get a COA for the concentrate at the Brix you intend to buy — not a generic product sheet. Ours are published in the COA library.
- Reconstitute a sample yourself to your target dilution and taste it blind against your NFC reference.
- Model landed cost per litre of finished drink, not per kilogram of input. High Brix looks expensive per kilo and is often cheaper per litre delivered.
- Confirm the label wording your market requires before you finalise artwork, not after.
- Check that added-water quality at your bottling site is specified. With from-concentrate, your water becomes part of the product.
Common questions
- Is from-concentrate coconut water lower quality?
- Not inherently. It carries an extra thermal step, so a badly made concentrate will be clearly worse than good NFC. A well-made low-temperature concentrate reconstituted correctly is much closer than most people expect. The processing method matters far more than the category label.
- Does concentrate have added sugar?
- It should not. Concentration removes water; it does not add anything. If a concentrate’s Brix comes from added sugar rather than from removing water, that is adulteration, not concentration — and it will show up on a proper compositional analysis. Ask for one.
- Can I buy concentrate and still say “100% coconut water”?
- Usually yes on composition, provided nothing else is added, but the from-concentrate disclosure still applies separately. The two claims answer different questions: what is in it, and how it was made. Check both with your regulatory advisor.
- What Brix should I order?
- Higher Brix ships less water and costs less to freight per finished litre, but needs more careful cold-chain handling and accurate dilution at your end. Most buyers land between 60° and 82°. Our Brix guide sets out the reconstitution ratio for each.
